Smoke-Glazed Peach Chicken Skewers

Juicy chicken and peaches are grilled together with a glossy smoky-sweet glaze that feels right at home at a summer cookout.

Ingredients

  • boneless skinless chicken thighs, cut into chunks1 1/2 lb
  • ripe peaches, cut into wedges3
  • olive oil2 tbsp
  • apple cider vinegar2 tbsp
  • brown sugar2 tbsp
  • tomato paste1 tbsp
  • Dijon mustard1 tbsp
  • smoked paprika1 tsp
  • salt1 tsp
  • black pepper1/2 tsp
  • red onion, cut into chunks1
  • wooden or metal skewers8

Method

  1. 1If using wooden skewers, soak them in water for at least 20 minutes.
  2. 2In a bowl, whisk together olive oil, vinegar, brown sugar, tomato paste, Dijon mustard, smoked paprika, salt, and pepper to make the glaze.
  3. 3Toss the chicken chunks with about half of the glaze and thread them onto skewers with peach wedges and red onion pieces.
  4. 4Preheat the grill to medium-high and oil the grates.
  5. 5Grill the skewers for 10 to 14 minutes, turning every few minutes, until the chicken is cooked through and the peaches are caramelized.
  6. 6Brush the remaining glaze over the skewers during the last 2 minutes of grilling.
  7. 7Rest for 3 minutes before serving.

Tips

  • Keep the peach wedges fairly firm so they hold their shape on the grill.
  • For a milder glaze, reduce the brown sugar by 1 tablespoon and add a splash more vinegar.
