Smoke-Glazed Peach Chicken Skewers
Juicy chicken and peaches are grilled together with a glossy smoky-sweet glaze that feels right at home at a summer cookout.

Ingredients
- boneless skinless chicken thighs, cut into chunks1 1/2 lb
- ripe peaches, cut into wedges3
- olive oil2 tbsp
- apple cider vinegar2 tbsp
- brown sugar2 tbsp
- tomato paste1 tbsp
- Dijon mustard1 tbsp
- smoked paprika1 tsp
- salt1 tsp
- black pepper1/2 tsp
- red onion, cut into chunks1
- wooden or metal skewers8
Method
- 1If using wooden skewers, soak them in water for at least 20 minutes.
- 2In a bowl, whisk together olive oil, vinegar, brown sugar, tomato paste, Dijon mustard, smoked paprika, salt, and pepper to make the glaze.
- 3Toss the chicken chunks with about half of the glaze and thread them onto skewers with peach wedges and red onion pieces.
- 4Preheat the grill to medium-high and oil the grates.
- 5Grill the skewers for 10 to 14 minutes, turning every few minutes, until the chicken is cooked through and the peaches are caramelized.
- 6Brush the remaining glaze over the skewers during the last 2 minutes of grilling.
- 7Rest for 3 minutes before serving.
Tips
- Keep the peach wedges fairly firm so they hold their shape on the grill.
- For a milder glaze, reduce the brown sugar by 1 tablespoon and add a splash more vinegar.
