Method

  1. 1Whisk the flour, baking powder, and salt in a bowl.
  2. 2In another bowl, whisk the milk, egg, melted butter, vanilla, and beet juice until evenly pink.
  3. 3Stir the wet ingredients into the dry just until combined; do not overmix.
  4. 4Simmer the berries, orange juice, honey, and lemon zest in a small pan for 5 to 7 minutes until syrupy.
  5. 5Heat a lightly greased skillet over medium heat and cook the batter in heart shapes or small rounds, about 2 minutes per side.
  6. 6Serve the pancakes warm with the citrus berry syrup spooned over the top.
