  • small pasta pearls2 cups
  • olive oil3 tbsp
  • garlic, minced3 cloves
  • tomato paste2 tbsp
  • crushed tomatoes1 can (14 oz)
  • vegetable broth3 cups
  • kalamata olives, chopped1/2 cup
  • breadcrumbs3/4 cup
  • grated parmesan1/2 cup
  • baby spinach3 cups

Method

  1. 1Heat 1 tablespoon olive oil in a skillet and toast the breadcrumbs until crisp, then stir in the chopped olives and set aside.
  2. 2Add the remaining oil and garlic to the skillet and cook briefly until fragrant.
  3. 3Stir in tomato paste, crushed tomatoes, broth, and pasta pearls, then simmer and stir often until the pasta is tender and the sauce thickens.
  4. 4Fold in the spinach until just wilted.
  5. 5Top with parmesan and the olive crumb mixture before serving.
  6. 6Serve immediately while the topping stays crisp.

Tips

  • Stir often so the pasta pearls do not stick to the pan.
  • If the mixture gets too thick before the pasta is done, add a splash more broth.
