Orange-Sesame Olive Oil Cake with Rosemary Syrup

Ingredients

  • all-purpose flour1 3/4 cups

  • eggs3
  • sugar1 cup
  • olive oil3/4 cup
  • orange zest2 tbsp
  • orange juice1/2 cup
  • plain yogurt1/2 cup
  • sesame seeds2 tbsp
  • fresh rosemary2 sprigs

Method

  1. 1Heat the oven to 350°F and line an 8-inch cake pan with parchment.
  2. 2Whisk flour, baking powder, salt, and sesame seeds in a bowl.
  3. 3In a second bowl, beat the eggs and sugar until pale, then slowly whisk in olive oil, orange zest, orange juice, and yogurt.
  4. 4Fold the dry ingredients into the wet mixture just until combined.
  5. 5Pour into the pan and bake until the center springs back and a tester comes out clean.
  6. 6While the cake bakes, simmer a small splash of orange juice with rosemary and a spoonful of sugar until lightly syrupy.
  7. 7Brush the warm cake with the rosemary syrup and cool before slicing.

Tips

  • Don't overmix once the flour is added or the cake can turn dense.
  • A light syrup brushed onto the warm cake adds aroma without making it soggy.
  • Toast the sesame seeds briefly before adding them if you want a deeper nutty note.
