A tender semolina cake scented with orange blossom and finished with a delicate sugared crust.

50 min 4 Medium

Ingredients

  • semolina1 cup
  • all-purpose flour3/4 cup
  • baking powder1 1/2 teaspoons
  • salt1/4 teaspoon
  • eggs2
  • olive oil1/3 cup
  • plain yogurt1/2 cup
  • sugar3/4 cup
  • orange blossom water1 tablespoon
  • orange zest1 tablespoon
  • milk1/4 cup
  • sliced almonds1/3 cup

Method

  1. 1Heat the oven to 350°F (175°C) and lightly oil a small cake pan.
  2. 2Whisk together semolina, flour, baking powder, and salt.
  3. 3In another bowl, beat the eggs with sugar, then whisk in olive oil, yogurt, milk, orange blossom water, and orange zest.
  4. 4Fold the dry ingredients into the wet mixture until just combined, then rest the batter for 10 minutes.
  5. 5Pour into the pan, scatter almonds over the top, and bake until golden and set, about 30 to 35 minutes.
  6. 6Cool for 15 minutes before slicing so the cake keeps its tender crumb.

Tips

  • Resting the batter gives the semolina time to hydrate, improving texture.
  • For a more pronounced floral note, brush the warm cake with a few extra drops of orange blossom water mixed with water.
