Ingredients

  • boneless chicken thighs1 1/2 pounds
  • apples, thinly sliced2 medium
  • carrot, julienned1 large
  • red onion, thinly sliced1 small
  • Dijon-style mustard2 tablespoons
  • maple syrup1 1/2 tablespoons
  • olive oil2 tablespoons
  • salt1 teaspoon
  • black pepper1/2 teaspoon
  • fresh thyme leaves1 teaspoon
  • parchment paper4 large sheets

Method

  1. 1Preheat the oven to 425°F and cut the parchment into four large sheets.
  2. 2In a bowl, mix mustard, maple syrup, olive oil, salt, pepper, and thyme.
  3. 3Toss the chicken, apples, carrot, and onion with the glaze until evenly coated.
  4. 4Divide the mixture among the parchment sheets and fold them into sealed parcels.
  5. 5Place on a baking sheet and bake 22 to 25 minutes until the chicken is cooked through.
  6. 6Open the parcels carefully to release steam, then spoon any juices over the top.
  7. 7Serve with the softened apples and vegetables alongside the chicken.

Tips

  • Slice the vegetables thinly so they cook at the same pace as the chicken.
  • For extra browning, open the parcels and broil for 1 minute at the end.
  • This also works well with boneless turkey thighs.
