Ingredients
- sweet potatoes4 medium
- ricotta cheese1 cup
- fresh spinach4 cups
- garlic, minced2 cloves

Method
- 1Microwave or roast the sweet potatoes until tender and easily pierced.
- 2Meanwhile, warm olive oil in a skillet and cook garlic for 20 seconds.
