  • sweet potatoes4 medium
  • ricotta cheese1 cup
  • fresh spinach4 cups
  • garlic, minced2 cloves
  • lemon zest1 tsp
  • parmesan, grated1/4 cup
  • olive oil1 tbsp
  • walnuts, chopped1/3 cup
  • salt and black pepperto taste
  • red pepper flakespinch

Method

  1. 1Microwave or roast the sweet potatoes until tender and easily pierced.
  2. 2Meanwhile, warm olive oil in a skillet and cook garlic for 20 seconds.
  3. 3Add spinach and toss just until wilted, then season lightly.
  4. 4Mix ricotta, lemon zest, parmesan, salt, pepper, and red pepper flakes in a bowl.
  5. 5Split the sweet potatoes open, fluff the centers with a fork, and fill with spinach and ricotta mixture.
  6. 6Top with chopped walnuts and serve while hot.

Tips

  • If you have a little extra time, roast the sweet potatoes for deeper flavor instead of microwaving.
  • Toast the walnuts in a dry pan for a minute or two to make their flavor pop.
