Ingredients

  • all-purpose flour2 cups
  • cold vegan butter, cubed1/2 cup
  • ice water1/2 cup
  • cooked chickpeas, lightly mashed1 1/2 cups
  • carrot, finely diced1
  • celery, finely diced1 stalk
  • onion, minced1/2 medium
  • dried fennel seed, lightly crushed1 teaspoon
  • lemon zest1 teaspoon
  • fresh parsley, chopped1/4 cup
  • olive oil1 tablespoon

Method

  1. 1Make a quick dough by rubbing the vegan butter into the flour with a pinch of salt until it looks like coarse crumbs, then add ice water and bring it together. Chill while preparing the filling.
  2. 2Warm the olive oil in a skillet and cook the onion, carrot, and celery until softened, about 6 minutes.
  3. 3Stir in the chickpeas, fennel seed, lemon zest, parsley, and a pinch of salt. Cook for 2 minutes, then cool slightly.
  4. 4Roll the dough and cut into 8 circles or squares. Spoon filling onto one side of each piece, leaving room to seal.
  5. 5Fold over, press the edges firmly, and crimp with a fork. Cut a small steam vent on top.
  6. 6Bake at 400°F until golden and crisp, 20 to 22 minutes.
  7. 7Cool for 5 minutes before serving so the filling settles.

Tips

  • Keep the butter cold for a flaky crust; if it softens, chill the dough again before rolling.
  • Don’t over-mash the chickpeas—some texture makes the filling feel heartier.
