Ingredients

Method
- 1Make a quick dough by rubbing the vegan butter into the flour with a pinch of salt until it looks like coarse crumbs, then add ice water and bring it together. Chill while preparing the filling.
- 2Warm the olive oil in a skillet and cook the onion, carrot, and celery until softened, about 6 minutes.
- 3Stir in the chickpeas, fennel seed, lemon zest, parsley, and a pinch of salt. Cook for 2 minutes, then cool slightly.
- 4Roll the dough and cut into 8 circles or squares. Spoon filling onto one side of each piece, leaving room to seal.
- 5Fold over, press the edges firmly, and crimp with a fork. Cut a small steam vent on top.
- 6Bake at 400°F until golden and crisp, 20 to 22 minutes.
- 7Cool for 5 minutes before serving so the filling settles.

- Keep the butter cold for a flaky crust; if it softens, chill the dough again before rolling.
- Don’t over-mash the chickpeas—some texture makes the filling feel heartier.
