Herb-Crusted Cod with Olive Lattices and Lemon Bean Smash

Ingredients
- cod fillets4 pieces, about 6 oz each
- olive oil3 tablespoons
- fresh dill, chopped1/4 cup
- fresh parsley, chopped1/4 cup
- lemon zest1 tablespoon
- lemon juice2 tablespoons
- cannellini beans, drained and rinsed2 cans (15 oz each)
- garlic clove1 large
- pitted green olives, chopped1/2 cup
- plain yogurt1/3 cup
- salt and black pepperto taste
- flaky saltoptional, for finishing
Method
- 1Heat the oven to 425°F (220°C) and line a tray with parchment.
- 2Mash the beans with yogurt, garlic, lemon juice, half the olives, salt, and pepper until thick and rustic.
- 3Mix dill, parsley, lemon zest, 2 tablespoons olive oil, salt, and pepper into a paste.
- 4Pat the cod dry, brush with the herb paste, and place on the tray.
- 5Roast 10 to 12 minutes, until the fish flakes and the crust is vivid green.
- 6Warm the remaining olives in the last tablespoon of olive oil for 1 minute.
- 7Serve the cod over the lemon bean smash and spoon the olives over the top.
Tips
- Don’t over-mash the beans; some texture makes the base feel richer.
- Cod is done when it flakes easily but still looks moist at the center.
