Ingredients

  • naan or flatbreads4 small
  • sweet potato1 large, peeled and diced small
  • olive oil2 tbsp
  • harissa paste1 to 2 tbsp
  • cooked lentils1 1/2 cups
  • ground cumin1/2 tsp
  • salt3/4 tsp
  • plain yogurt1/2 cup
  • lime zest and juicefrom 1 lime
  • cucumber1 cup, diced
  • fresh mint2 tbsp, chopped
  • feta1/2 cup, crumbled

Method

  1. 1Toss the sweet potato with 1 tablespoon olive oil, harissa, cumin, and salt.
  2. 2Roast or pan-cook the sweet potato until tender and lightly browned, about 10 to 12 minutes.
  3. 3In a separate skillet, warm the lentils with the remaining olive oil until they begin to crisp at the edges, about 4 minutes.
  4. 4Mix the yogurt with lime zest and juice.
  5. 5Warm the flatbreads, then spread each with lime yogurt.
  6. 6Top with sweet potato, crunchy lentils, cucumber, mint, and feta.

Tips

  • Dice the sweet potato small so it cooks quickly on a weeknight.
  • For extra texture, let the lentils sit undisturbed for a minute or two in the pan.
