- naan or flatbreads4 small
- sweet potato1 large, peeled and diced small
- olive oil2 tbsp
- harissa paste1 to 2 tbsp
- cooked lentils1 1/2 cups
- ground cumin1/2 tsp
- salt3/4 tsp
- plain yogurt1/2 cup
- lime zest and juicefrom 1 lime
- cucumber1 cup, diced
- fresh mint2 tbsp, chopped
- feta1/2 cup, crumbled
Method
- 1Toss the sweet potato with 1 tablespoon olive oil, harissa, cumin, and salt.
- 2Roast or pan-cook the sweet potato until tender and lightly browned, about 10 to 12 minutes.
- 3In a separate skillet, warm the lentils with the remaining olive oil until they begin to crisp at the edges, about 4 minutes.
- 4Mix the yogurt with lime zest and juice.
- 5Warm the flatbreads, then spread each with lime yogurt.
- 6Top with sweet potato, crunchy lentils, cucumber, mint, and feta.
