Ingredients

- cooked jasmine rice1 1/2 cups
- toasted sesame seeds2 tbsp
- rice paper wrappers8
- shredded napa cabbage1 cup
- neutral oil sprayas needed
- rice vinegar1 tbsp
Method
- 1Preheat the oven to 425°F and lightly oil a baking sheet or use parchment.
- 2Cook the mushrooms in sesame oil over medium-high heat until their moisture evaporates and the edges turn caramelized.
- 3Stir in scallions, ginger, tamari, rice, sesame seeds, cabbage, and rice vinegar; cook just until combined and fragrant.
- 4Soften one rice paper wrapper at a time in warm water until pliable, then place it on a damp surface.
- 5Add filling, fold tightly into small parcels, and set seam-side down on the baking sheet.
- 6Mist or brush the tops lightly with oil and bake until blistered and crisp, about 15 minutes, flipping once if needed.
- 7Cool for a few minutes before serving so the wrappers set.
Tips
- Do not overfill the wrappers or they may split while baking.
- Chopping the mushrooms very finely helps the filling stay compact and even.
