Crisp Apple, Cheddar, and Seeded Flatbread Pockets

Ingredients

  • all-purpose flour2 cups
  • instant yeast1 teaspoon
  • warm water3/4 cup
  • olive oil2 tablespoons
  • salt1 teaspoon
  • apple, thinly sliced2 medium
  • sharp cheddar, shredded1 1/2 cups
  • thyme leaves1 teaspoon
  • mustard1 tablespoon
  • mixed seeds2 tablespoons
  • egg, beaten1 large

Method

  1. 1Mix the flour, yeast, salt, warm water, and 1 tablespoon olive oil into a soft dough, then knead briefly until smooth.
  2. 2Cover and rest for 15 minutes while you prepare the filling.
  3. 3Toss the apple slices with thyme and a pinch of salt.
  4. 4Divide the dough into 4 pieces and roll each into a thin oval.
  5. 5Spread a little mustard on one side of each oval, then add cheddar and apple slices.
  6. 6Fold the dough over to form pockets, seal the edges well, and brush with the beaten egg.
  7. 7Sprinkle with mixed seeds and bake at 425°F for 15 to 18 minutes until puffed and deeply golden.
  8. 8Cool slightly before serving so the cheese settles.

Tips

  • Slice the apples very thin so they soften quickly inside the pocket.
