Golden Herb-Dusted Fish Parcels with Soft Potatoes

Ingredients

  • white fish fillets4 fillets (about 6 oz each)
  • baby potatoes, halved1 pound
  • green beans, trimmed8 ounces
  • lemon, thinly sliced1 large
  • fresh dill, chopped2 tablespoons
  • fresh parsley, chopped2 tablespoons
  • olive oil2 tablespoons
  • butter, cut into small pieces2 tablespoons
  • garlic, thinly sliced2 cloves
  • salt1 teaspoon
  • black pepper1/2 teaspoon
  • parchment paper sheets4 large

Method

  1. 1Heat the oven to 425°F and line a baking sheet with the parchment sheets.
  2. 2Toss the potatoes with 1 tablespoon olive oil, half the salt, and pepper, then roast for 15 minutes.
  3. 3Lay each fish fillet on a parchment sheet and season with the remaining salt and pepper.
  4. 4Top each fillet with green beans, lemon slices, garlic, herbs, a few butter pieces, and a drizzle of olive oil.
  5. 5Fold and crimp the parchment into sealed parcels, then bake alongside the potatoes for 12 to 14 minutes.
  6. 6Open the parcels carefully and serve the fish with the roasted potatoes and any juices from the paper.

  • The parcels should be tightly sealed so the fish steams gently.
  • Choose fillets of even thickness for the best timing.
  • A little extra dill at the end makes the dish taste especially fresh.
