Ingredients

- shallot, finely chopped1

- panko breadcrumbs1/2 cup

Method
- 1Heat 1 tablespoon olive oil in a large skillet over medium heat and toast the panko with a pinch of salt until golden; remove to a bowl.
- 2Add the remaining oil, shallot, and garlic to the skillet and cook until fragrant, about 1 minute.
- 3Add the turkey, salt, and pepper, then break it up and cook until no longer pink.
- 4Stir in the snap peas and cook just until bright green and barely tender.
- 5Add lemon zest, lemon juice, and dill, then toss to coat.
- 6Serve topped with the crispy breadcrumbs.
