Citrus-Herb Skillet Cod with Charred Grapes

Flaky cod gets a glossy citrus-herb finish and a surprising burst of sweetness from lightly charred grapes.

Ingredients

  • cod fillets4 (about 5 oz each)
  • salt1 tsp
  • black pepper1/2 tsp
  • olive oil2 tbsp
  • red grapes2 cups
  • garlic cloves, thinly sliced3
  • lemon, zested and juiced1
  • orange, juiced1
  • fresh dill, chopped2 tbsp
  • baby spinach4 cups

Method

  1. 1Pat the cod dry and season both sides with salt and pepper.
  2. 2Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the grapes and cook 3 to 4 minutes until blistered in spots, then transfer to a bowl.
  3. 3Add the remaining oil to the skillet. Sauté the garlic for 20 seconds, then place the cod in the pan and cook 3 minutes on the first side.
  4. 4Flip the cod, add lemon juice, orange juice, and lemon zest to the pan, and spoon the liquid over the fish for 2 to 3 minutes until just cooked through.
  5. 5Scatter the spinach around the fish and cover for 30 to 45 seconds until wilted.
  6. 6Fold the grapes back into the skillet, sprinkle with dill, and serve immediately with the pan sauce spooned over top.

Tips

  • Choose cod pieces of similar thickness so they finish at the same time.
  • If the grapes are very tart, add an extra squeeze of orange at the end.
  • Serve with rice or crusty bread to catch the citrusy pan juices.
