Ingredients

- cooked green lentils2 cups
- cucumber, diced1 cup
- radishes, thinly sliced1 cup
- fresh dill, chopped2 tablespoons

Method
- 1Pat the salmon dry and season it with salt and pepper.
- 2Whisk the orange juice, lemon zest, and honey together.
- 3Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear the salmon skin-side down if applicable, then flip and cook until nearly done.
- 4Pour the citrus mixture into the pan and spoon the glaze over the salmon until glossy and just cooked through.
- 5Warm the lentils gently with the remaining olive oil and a pinch of salt.
- 6Fold the cucumber, radishes, and dill into the lentils, then spoon them onto plates.
- 7Add a dollop of yogurt and place the salmon on top, finishing with extra pan glaze.
Tips
- Do not overcook the salmon; it should flake easily but remain moist.
- For a milder plate, use less radish and add extra cucumber.
