Ingredients

  • salmon fillets4 (5-ounce) fillets
  • olive oil2 tablespoons
  • salt1 teaspoon
  • black pepper1/2 teaspoon
  • orange juice1/3 cup
  • lemon zest1 teaspoon
  • honey1 tablespoon
  • cooked green lentils2 cups
  • cucumber, diced1 cup
  • radishes, thinly sliced1 cup
  • fresh dill, chopped2 tablespoons
  • plain yogurt1/2 cup

Method

  1. 1Pat the salmon dry and season it with salt and pepper.
  2. 2Whisk the orange juice, lemon zest, and honey together.
  3. 3Heat 1 tablespoon olive oil in a skillet over medium-high heat and sear the salmon skin-side down if applicable, then flip and cook until nearly done.
  4. 4Pour the citrus mixture into the pan and spoon the glaze over the salmon until glossy and just cooked through.
  5. 5Warm the lentils gently with the remaining olive oil and a pinch of salt.
  6. 6Fold the cucumber, radishes, and dill into the lentils, then spoon them onto plates.
  7. 7Add a dollop of yogurt and place the salmon on top, finishing with extra pan glaze.

Tips

  • Do not overcook the salmon; it should flake easily but remain moist.
  • For a milder plate, use less radish and add extra cucumber.
