Charred Apricot and Halloumi Freekeh Skillet
Smoky freekeh catches the sweetness of blistered apricots and salty halloumi in a bright, one-pan lunch.

Ingredients
- freekeh1 cup
- water2 cups
- halloumi, sliced8 oz
- ripe apricots, halved and pitted6
- olive oil2 tbsp
- red onion, thinly sliced1 small
- lemon zest1 tsp
- lemon juice2 tbsp
- mint leaves, torn1/4 cup
- toasted pistachios, chopped1/4 cup
Method
- 1Rinse the freekeh, then simmer it in the water until tender and the liquid is absorbed, about 18 minutes.
- 2While it cooks, heat 1 tablespoon olive oil in a skillet and sear the halloumi until deeply golden on both sides; transfer to a plate.
- 3Add the remaining oil to the skillet and cook the apricots cut-side down with the onion until the fruit blisters and the onion softens.
- 4Fluff the freekeh and spread it in a serving bowl or back into the skillet.
- 5Fold in the apricots, onion, lemon zest, and lemon juice, then scatter the halloumi over the top.

Tips
- Choose apricots that are ripe but still firm so they hold their shape in the pan.
- A pinch of flaky salt at the end sharpens the sweet-sour contrast.
