Black Sesame Cocoa Sablé Rings

Crumbly cocoa rings with toasted black sesame and a delicately bitter-sweet finish, crisp at the edge and sandy in the center.

Ingredients

  • all-purpose flour1 3/4 cups
  • unsweetened cocoa powder1/4 cup
  • black sesame seeds, toasted and ground3 tbsp
  • powdered sugar1/2 cup
  • salt1/4 tsp
  • unsalted butter, softened3/4 cup
  • egg yolk1
  • vanilla extract1 tsp
  • milk1 tbsp
  • extra black sesame seeds for topping1 tbsp

Method

  1. 1Whisk flour, cocoa, ground sesame, powdered sugar, and salt together.
  2. 2Cream the butter until smooth, then beat in the egg yolk, vanilla, and milk.
  3. 3Add the dry ingredients and mix just until a dough forms; chill briefly for easier shaping.
  4. 4Roll the dough to about 1/4 inch thick and cut into rings or circles with small centers removed.
  5. 5Transfer to a lined tray, sprinkle with extra sesame seeds, and chill while the oven heats to 350°F.
  6. 6Bake until the cookies look set at the edges but still tender in the middle, about 10–12 minutes.
  7. 7Cool completely before moving, as they firm up as they rest.

Tips

  • Grinding the sesame seeds finer gives a more even texture.
  • Do not overbake; the sable should stay delicate and sandy.
  • A tiny pinch of flaky salt on top can sharpen the flavor.
