Black Pepper Pineapple Noodle Toss with Peanuts

Ingredients

  • rice noodles8 ounces
  • pineapple chunks2 cups
  • soy sauce2 tablespoons
  • lime juice1 1/2 tablespoons
  • brown sugar1 tablespoon
  • black pepper, freshly ground1 1/2 teaspoons
  • garlic, minced3 cloves
  • ginger, minced1 tablespoon
  • peanuts, chopped1/3 cup
  • sesame oil1 tablespoon

Method

  1. 1Cook the rice noodles according to the package directions, then drain and rinse briefly.
  2. 2Whisk the soy sauce, lime juice, brown sugar, black pepper, and 2 tablespoons water.
  3. 3Warm sesame oil in a large skillet and sauté the garlic and ginger for 30 seconds.
  4. 4Add the pineapple and cook until lightly browned and juicy.
  5. 5Toss in the noodles and pour over the sauce.
  6. 6Cook while tossing until the noodles are glossy and the sauce clings.
  7. 7Scatter peanuts over the top and serve right away.
  8. 8Add a few extra grinds of pepper if you want more bite.

Tips

  • Fresh pineapple gives the brightest flavor, but well-drained canned pineapple also works.
  • Rinse noodles just enough to stop the cooking; too much rinsing can make them slippery.
