Method
- 1Cook the rice noodles according to the package directions, then drain and rinse briefly.
- 2Whisk the soy sauce, lime juice, brown sugar, black pepper, and 2 tablespoons water.
- 3Warm sesame oil in a large skillet and sauté the garlic and ginger for 30 seconds.
- 4Add the pineapple and cook until lightly browned and juicy.

Tips
- Fresh pineapple gives the brightest flavor, but well-drained canned pineapple also works.
- Rinse noodles just enough to stop the cooking; too much rinsing can make them slippery.
