Method
- 1Preheat the oven to 400°F and prepare 4 small oven-safe ramekins or a baking dish.
- 2Chop the mushrooms finely and slice the onion.
- 3Cook the onion in olive oil over medium heat until translucent, then add the mushrooms and a pinch of salt; cook until the moisture evaporates and the mixture turns deeply browned.
- 4Mash the black garlic with soy sauce, then stir it into the mushrooms with thyme and pepper.
- 5Mix the cornstarch into the broth and pour it into the pan; simmer until the filling becomes glossy and thick.
- 6Divide the filling among the ramekins, cover with puff pastry, cut small steam vents, brush with plant milk, and bake for 20 to 25 minutes until puffed and golden.
