Ingredients

  • mixed mushrooms1 lb
  • yellow onion1 large
  • olive oil2 tbsp
  • black garlic cloves4
  • soy sauce1 tbsp
  • vegetable broth1 1/2 cups
  • cornstarch1 1/2 tbsp
  • fresh thyme1 tbsp
  • frozen puff pastry, thawed1 sheet
  • plant milk2 tbsp
  • salt1/2 tsp
  • black pepper1/2 tsp

Method

  1. 1Preheat the oven to 400°F and prepare 4 small oven-safe ramekins or a baking dish.
  2. 2Chop the mushrooms finely and slice the onion.
  3. 3Cook the onion in olive oil over medium heat until translucent, then add the mushrooms and a pinch of salt; cook until the moisture evaporates and the mixture turns deeply browned.
  4. 4Mash the black garlic with soy sauce, then stir it into the mushrooms with thyme and pepper.
  5. 5Mix the cornstarch into the broth and pour it into the pan; simmer until the filling becomes glossy and thick.
  6. 6Divide the filling among the ramekins, cover with puff pastry, cut small steam vents, brush with plant milk, and bake for 20 to 25 minutes until puffed and golden.

Tips

  • For the richest flavor, let the mushroom mixture brown undisturbed in the pan for short intervals.
  • Cool the filling for a few minutes before topping so the pastry stays crisp.
