Method

  1. 1Heat the oven to 350°F and grease or line a small muffin tin.
  2. 2Whisk eggs, sugar, olive oil, orange zest, lemon zest, and salt until lightly frothy.
  3. 3Fold in almond flour, semolina flour, and baking powder just until combined.
  4. 4Divide the batter among the cups and bake 14 to 18 minutes until golden and springy.
  5. 5Warm honey with extra-virgin olive oil in a small pan or microwave until fluid.
  6. 6Brush or drizzle the honey over the warm cakes and cool slightly before serving.
