Yorkshire Parkin Pudding with Date Toffee Sauce

A warm spiced oat pudding baked in one dish and drenched in a dark, sticky date toffee sauce.

Ingredients

  • rolled oats90 g
  • plain flour120 g
  • soft dark brown sugar100 g
  • ground ginger2 tsp
  • mixed spice1 tsp
  • baking powder1 tsp
  • milk250 ml
  • golden syrup3 tbsp
  • unsalted butter, melted80 g
  • dates, finely chopped120 g

Method

  1. 1Heat the oven to 180°C and lightly grease a medium baking dish.
  2. 2In a bowl, mix the oats, flour, sugar, ginger, mixed spice, and baking powder.
  3. 3Stir in the milk, golden syrup, and melted butter until you have a thick batter.
  4. 4Fold in the chopped dates, then pour into the dish and level the top.
  5. 5Bake for 30–35 minutes until risen, set, and deeply browned around the edges.
  6. 6Let it sit for 5 minutes, then serve warm with extra spoonfuls of syrup or custard if desired.

Tips

  • For a richer pudding, soak the dates in a little hot tea for 10 minutes before folding them in.
  • The centre should be softly springy, not wet, when it comes out of the oven.
  • This is best served warm, when the spices are most fragrant.
