Smoky Haddock and Leek Comfort Traybake

Flaky haddock bakes over leeks and potatoes with a whisper of smoke and lemony cream for a snug one-pan supper.

Ingredients

  • haddock fillets4
  • new potatoes, halved500 g
  • leeks, sliced2
  • butter2 tbsp
  • smoked paprika1 tsp
  • double cream1/2 cup
  • lemon zest1 tsp
  • parsley, chopped2 tbsp
  • salt and black pepperto taste

Method

  1. 1Heat the oven to 210°C and put the potatoes in a roasting tin with salt, pepper, and a little butter.
  2. 2Roast the potatoes for 12 minutes, then add the leeks and smoked paprika with the remaining butter.
  3. 3Stir, nestle the haddock among the vegetables, and spoon the cream around the fish.
  4. 4Scatter over lemon zest and season lightly.
  5. 5Bake for 10 to 12 minutes until the fish flakes and the potatoes are tender.
  6. 6Finish with parsley and serve straight from the tray.

Tips

  • Choose haddock fillets of even thickness so they cook at the same rate.
  • Do not overbake; the cream should be just bubbling, not reduced to oiliness.
