- jasmine rice1 1/2 cups

Method
- 1Rinse the rice until the water runs mostly clear, then drain well.
- 2Heat the neutral oil in a heavy pot over medium heat and sauté the garlic and ginger until fragrant.
- 3Add the carrots and mushrooms, cooking for 3 to 4 minutes to lightly color them.
- 4Stir in the rice, water, and 2 tablespoons of soy sauce, then nestle the tofu cubes on top.
- 5Bring to a gentle boil, cover, and reduce to low heat; cook undisturbed for 18 to 20 minutes.
- 6Arrange the bok choy over the surface, cover again, and cook 5 minutes more until the greens are tender.
- 7Drizzle with the remaining soy sauce and sesame oil, then rest off the heat for 10 minutes before fluffing lightly.
- 8Top with scallions and sesame seeds, and serve from the pot to keep the festive crust intact.
