Marmalade Sticky Oat Traybake with Ginger Cream

Chewy oats and citrusy marmalade bake into a soft square with a warm ginger-scented topping that tastes like teatime in a pan.

Ingredients

  • rolled oats180 g
  • plain flour120 g
  • brown sugar90 g
  • baking powder1 tsp
  • butter100 g, melted
  • marmalade150 g
  • golden syrup2 tbsp
  • egg1
  • double cream120 ml
  • ground ginger1 tsp

Method

  1. 1Heat the oven to 180°C and line a small square baking tin with parchment.
  2. 2Mix the oats, flour, sugar, and baking powder in a bowl.
  3. 3Stir in the melted butter, egg, and half the marmalade until a thick sticky dough forms.
  4. 4Press the mixture evenly into the tin and dollop the remaining marmalade over the surface, swirling it lightly with a knife.
  5. 5Bake for 22-25 minutes until set at the edges and golden on top, then cool for 10 minutes.
  6. 6Whip the cream with the ginger and a spoonful of syrup until softly thickened.
  7. 7Cut the traybake into squares and serve with the ginger cream.

Tips

  • Do not overbake; the middle should stay slightly tender for the best chew.
  • Orange marmalade with thicker peel gives the bake a pleasantly bitter edge.
