Ingredients
- rolled oats180 g
- plain flour120 g
- brown sugar90 g
- baking powder1 tsp
- butter100 g, melted
- marmalade150 g
- golden syrup2 tbsp
- egg1
- double cream120 ml
- ground ginger1 tsp
Method
- 1Heat the oven to 180°C and line a small square baking tin with parchment.
- 2Mix the oats, flour, sugar, and baking powder in a bowl.
- 3Stir in the melted butter, egg, and half the marmalade until a thick sticky dough forms.
- 4Press the mixture evenly into the tin and dollop the remaining marmalade over the surface, swirling it lightly with a knife.
- 5Bake for 22-25 minutes until set at the edges and golden on top, then cool for 10 minutes.
- 6Whip the cream with the ginger and a spoonful of syrup until softly thickened.
- 7Cut the traybake into squares and serve with the ginger cream.
Tips
- Do not overbake; the middle should stay slightly tender for the best chew.
- Orange marmalade with thicker peel gives the bake a pleasantly bitter edge.
