Malt-Glazed Sausage, Cabbage and Apple Tray Bake

Sticky sausages roast with cabbage, apple and onions for a sweet-savoury dinner with a pub-snack feel.

Ingredients

  • pork sausages8
  • red cabbage, cut into thick wedges1 small
  • apples, cored and sliced2
  • red onions, cut into wedges2
  • vegetable oil1 tbsp
  • malt vinegar2 tbsp
  • runny honey1 tbsp
  • wholegrain mustard1 tbsp
  • fresh thyme leaves1 tsp
  • salt and black pepperto taste

Method

  1. 1Heat the oven to 210°C and line a roasting tray with baking paper or lightly oil it.
  2. 2Toss the cabbage, apples, and onions with the oil, thyme, salt, and pepper, then spread them across the tray.
  3. 3Nestle the sausages among the vegetables and roast for 20 minutes.
  4. 4Mix the malt vinegar, honey, and mustard, then spoon or brush the glaze over the sausages and vegetables.
  5. 5Return to the oven for 15–18 minutes more, turning the sausages once, until everything is browned and sticky.
  6. 6Serve straight from the tray with the juices spooned over the top.

Tips

  • Choose apples that hold their shape so they don’t disappear into the pan.
  • If the tray looks dry, add 2 tablespoons of water halfway through roasting.
  • A little extra mustard at the table sharpens the sweetness nicely.
