Malt-Glazed Sausage, Cabbage and Apple Tray Bake

Ingredients
- pork sausages8
- red cabbage, cut into thick wedges1 small
- apples, cored and sliced2
- red onions, cut into wedges2
- vegetable oil1 tbsp
- malt vinegar2 tbsp
- runny honey1 tbsp
- wholegrain mustard1 tbsp
- fresh thyme leaves1 tsp
- salt and black pepperto taste
Method
- 1Heat the oven to 210°C and line a roasting tray with baking paper or lightly oil it.
- 2Toss the cabbage, apples, and onions with the oil, thyme, salt, and pepper, then spread them across the tray.
- 3Nestle the sausages among the vegetables and roast for 20 minutes.
- 4Mix the malt vinegar, honey, and mustard, then spoon or brush the glaze over the sausages and vegetables.
- 5Return to the oven for 15–18 minutes more, turning the sausages once, until everything is browned and sticky.
- 6Serve straight from the tray with the juices spooned over the top.
Tips
- Choose apples that hold their shape so they don’t disappear into the pan.
- If the tray looks dry, add 2 tablespoons of water halfway through roasting.
- A little extra mustard at the table sharpens the sweetness nicely.
