Cider-Glazed Parsnip & Cheddar Tray Puffs

Flaky hand pies stuffed with sweet parsnip, sharp cheddar, and a glossy cider glaze that tastes like a rainy-afternoon hug.

Ingredients

  • all-purpose flour220 g
  • cold butter, cubed120 g
  • fine salt1 tsp
  • ice water5–7 tbsp
  • parsnips, peeled and diced300 g
  • onion, finely chopped1 medium
  • sharp cheddar, grated140 g
  • dry cider120 ml
  • thyme leaves1 tsp
  • egg, beaten1

Method

  1. 1Make the pastry by rubbing the cold butter into the flour and salt until the mix resembles coarse crumbs.
  2. 2Stir in ice water a tablespoon at a time just until the dough comes together, then chill for 15 minutes.
  3. 3Cook the parsnips and onion in a small pan with a splash of water until tender and nearly dry, then stir in cider and thyme and simmer until glossy.
  4. 4Mash the filling lightly, fold in the cheddar, and season to taste.
  5. 5Roll out the pastry and cut into 8 circles or squares; spoon filling onto half of them and top with the remaining pastry pieces.
  6. 6Seal the edges, brush with beaten egg, and cut a small steam vent on top.
  7. 7Bake at 200°C until deeply golden and crisp, about 20–25 minutes, then cool briefly before serving.

Tips

  • Let the filling cool before assembling so the pastry stays flaky.
  • For a richer finish, add a pinch of white pepper to the filling.
  • These are excellent with brown sauce or a sharp chutney on the side.
