Cheddar and Branston-Style Savoury Scones with Chive Butter

Warm, craggy scones with tangy cheese and a sweet-sharp relish baked right into the crumb, served with chive butter.

Ingredients

  • self-raising flour250 g
  • fine oatmeal40 g
  • butter, cold and cubed60 g
  • mature cheddar, grated120 g
  • pickle relish4 tbsp
  • milk120 ml
  • egg, beaten1
  • chives, finely sliced2 tbsp
  • salt1/2 tsp
  • black pepper1/4 tsp

Method

  1. 1Heat the oven to 210 C and line a tray with baking paper.
  2. 2Rub the butter into the flour, oatmeal, salt, and pepper until the mixture looks like fine crumbs.
  3. 3Stir in the cheddar and chives, then add the pickle relish and most of the milk to form a soft dough.
  4. 4Pat the dough to 2 cm thickness and cut into 6 to 8 rounds; place on the tray and brush with beaten egg.
  5. 5Bake for 12 to 15 minutes until risen and deeply golden, then cool for 5 minutes.
  6. 6Mix any remaining egg with a teaspoon of milk and a pinch of chives to make a simple brush-on butter for serving, or serve with plain butter if preferred.

Tips

  • Handle the dough as little as possible to keep the scones light.
  • If the relish is very wet, reduce the milk slightly so the dough does not become sticky.
  • Best eaten warm, but they also split and toast beautifully the next day.
