Bramble Pork, Cabbage & Apple Skillet Pie

Ingredients
- ground pork500 g
- butter30 g
- leek, sliced1 large
- cabbage, shredded250 g
- apple, peeled and diced1 large
- wholegrain mustard1 tbsp
- vegetable stock150 ml
- potatoes, peeled and diced700 g
- milk60 ml
- salt and black pepperto taste
Method
- 1Boil the potatoes in salted water until tender, then drain and mash with milk, butter, salt, and pepper.
- 2In a large ovenproof skillet, cook the leek in a little butter until softened.
- 3Add the pork and brown it well, breaking it into small pieces as it cooks.
- 4Stir in cabbage, apple, mustard, and stock, then simmer until the liquid reduces and the cabbage turns silky.
- 5Spread the mashed potatoes over the filling, roughing the top with a fork for extra crunch.
- 6Bake at 210°C until the top is golden and the edges are bubbling, about 18–20 minutes.
- 7Rest for 5 minutes before scooping into bowls.

- Use a tart apple for the best sweet-savory balance.
- If the filling seems loose, simmer it a minute longer before topping.
- Finish with chopped parsley or chives for brightness.
