Braised Cabbage, Pear and Pork Stew with Mustard Croutons

Ingredients
- pork shoulder, diced500 g
- cabbage, shredded4 cups
- pear, diced1 large
- onion, chopped1
- garlic, minced2 cloves
- chicken stock2 cups
- wholegrain mustard1 tbsp
- white bread, cubed2 cups
- butter2 tbsp
- salt and black pepperto taste
Method
- 1Brown the pork in a heavy pot until nicely colored, then remove and set aside.
- 2Cook the onion and garlic in the same pot until softened.
- 3Add the cabbage and pear, stirring until the cabbage begins to wilt.
- 4Return the pork, pour in the stock, and simmer covered until the stew thickens slightly and the pork is tender.
- 5Toss bread cubes with butter and mustard, then toast them in a hot skillet or oven until crisp.
- 6Season the stew well and serve topped with the mustard croutons.
Tips
- Cut the pear fairly firm so it keeps a little shape in the stew.
- If the stew tastes flat, a small extra spoon of mustard sharpens everything at the end.
